Wild herbs and edible nature – guided foraging tours
"Sanke" means to gather from nature. Many know it from gathering firewood – but there is far more to be found. We work with the edible, and the variety of plants, flowers, berries, leaves, fruits and mushrooms opens up a whole new larder.
Have you ever eaten wild flowers? Leaves straight from the tree? Mushrooms that smell of garlic? If not, you have not been out with Sanketure.
Experienced foragers as your guides
We are specialists in wild food from nature. With nature interpreter Nina you get an experienced, professional forager who knows the edible and its many flavours – and knows how to bring out the best in wild ingredients. Thomas Askov is a trained gastronome and shares his knowledge of preparing food, both wild and conventional, from more than 20 years of experience.
How a tour works
We offer guided foraging tours of around two hours. Together we explore two different habitats and everything edible along the way. You learn to recognise the plants yourself, which environments to find them in, and what they pair well with in the kitchen.
Tours run from spring into late autumn – a good nine to ten months of the year in which to join us and learn about nature's wild kitchen. We offer tours across Zealand, particularly around Copenhagen, North Zealand and Central Zealand, and occasionally on Funen and in Jutland.
